Hawawshi is the famous Egyptian street food, you will encounter it in all governorates, especially in Cairo and Alexandria where they call it Baladi Hawawshi. It is basically a dough stuffed with a mixture of minced meat seasoned with spices, onions, garlic, hot peppers, and fresh herbs. YumReads will today share with you how to make Alexandrian Hawawshi at home. Chef Hassan Mohammed said that the Alexandrian Hawawshi is 80% pure meat and 20% fat. One loaf of Hawawshi may contain 22 grams of protein, and also contains 2 grams of fiber. Mohammed pointed out that eating the meal of Hawawshi, one of the fatty meals, you have to eat it every now and then, because one loaf without meal supplements, its calories reach 640 calories which represents a large dose that leads to obesity. Sandy Ehab, a student at Alexandria University said that the Alexandrian Hawawshi is special and different from any other one, and it is different from Hawawshi Cairo, as Cairo’s Hawawshi consists of liver stuffed with meat, but what distinguishes Hawawshi at Alexandria is that it is cooked with dough combined with meat. Alexandrian Hawawshi Recipe: Ingredients of Hawawshi: 1 kg of minced meat 6 onions chopped into small cubes Pepper chopped into small squares Chopped parsley Black pepper, salt, and cumin Dry coriander Rosemary 2 mint leaves Butter for greasing Ingredients of the dough: 1 kg of flour 2 tablespoons of instant yeast 6 spoonful oil 2 cups of water Salt Sugar Black seed and sesame Instructions 1- The meat is chopped until it is rough and ready to use 2- In a bowl, put the yeast, sugar, and a glass of water, stir well, then leave it in a warm dark place for 15 minutes 3- In another bowl, put flour, powdered yogurt, and oil and mix well 4- Add the yeast mixture and immerse it, then add water gradually, until you get a soft and cohesive paste 5- Cover the bowl with a clean towel, then place it in a warm place for 60 minutes 6- In a large bowl, put chopped parsley, dry coriander, 2 mint leaves, and rosemary, combine them with chopped onions and mix these well 7- Add to the mixture, colored and spicy pepper, salt, black pepper, and cumin, and the chili is optional, then add this mixture to the meat. 8- All these ingredients are stirred with onions and vegetables, then cover the bowl, and leave it in the refrigerator for an hour 9- After an hour, add the meat to them, stir well so that the marinade can reach all the meat 10- Preheat the oven to 180 degrees Celsius 11- Divide the dough and meat into balls, then spread the first ball, then spread each meatball over each dough ball 12- Spread the second ball of dough, then place it over the meat, then close the ends of the dough with a fork 13- Repeat these steps with the rest of the dough and meat 14- Put the Hawawshi in a tray greased with a little oil, then put the black seed and sesame to decorate 14- Raise the temperature to 250 degrees Celsius, and put the tray in the oven for 25-30 minutes, until it becomes golden 15- Serve hotly chopped four portions with French fries and pickled potatoes
